Minerals  There are several reasons why many U.S soils have become depleted in nutrients. Soil erosion : Erosion removes the soil and organic matter reserved for nutrients . Increased Nutrient Demand : Higher yields of crops have not kept up with the natural release from minerals and organic matter in the soil.  A study by Donald Davis from University of Texas (UT)  published December 2004 Journal of the American College of Nutrition found a declining nutritional content.  U.S Department of Agriculture nutritional data from both 1950 and 1999 found "reliable declines" in protein, calcium, phosphorus, iron, riboflavin, and vitamin C.  Potassium: A vasodilator, potassium  lowers blood vessel tension, ensuring distribution of oxygen. Assistance in low blood pressure correction, and blood pressure regulation, which in conjunction with lower blood pressure tension, and blood pressure regulation increases water flow in the body alleviating muscle disorders and cramps.
